Ingredients needed for Tortellini Soup
- Tortellini: I love the fresh three cheese tortellini by Buitoni but feel free to use any kind or flavor!
- Tomatoes: To make this more authentic, use sun-dried tomatoes! I used two fresh garden tomatoes because I think they are less acidic but choose whatever you prefer! You could even use canned diced tomatoes.
- Lemon Juice : This is key to giving the soup a bright flavor and to cut some of the creaminess! It is highly recommended. I used juice from 1/2 of a lemon.
- Onions and Garlic: The onion and garlic give this soup extra flavor and are a must! Use powder if you do not have garlic on hand but I highly recommend using fresh onion for this!
- Italian Seasoning: Or you could use a “Tuscan” seasoning blend.
- Oregano and Basil: You could add a few chopped leaves of both or just one for a bright flavor!
- Spinach: I love using spinach in this recipe and adding it at the same time as the tortellini since they both will cook in the same amount of time! You could also do kale or add mushrooms to this recipe!
- Heavy Cream: I only did a splash to give this soup its beautiful color and rich creaminess.
- Parmesan Cheese: I put some parmesan on top for garnish to make this even more cheesy!
- Chicken Stock: You can also do vegetable stock or beef broth. This will be the base of your soup. You can always add water with the broth if you do not have enough and adjust the seasonings accordingly.
- Marinara Sauce: I put 2 tablespoons of marinara sauce in this to give it a better flavor profile and to balance the cream but it is totally optional!
How to make Tuscan Tortellini Soup
- First, heat up two tablespoons of olive oil in a large pot on medium heat. Then sauté the onions until they are soft and translucent. Next, add the garlic and tomatoes together and cook for a few minutes until the tomatoes get soft. Add salt, pepper, and Italian seasoning.
- Add the chicken broth, lemon juice and fresh herbs then raise the temperature to high heat until it starts boiling. Add the tortellini and spinach then cover with a lid. Let cook for 4 minutes, or according to your package instructions.
- Remove from the heat FAST, you do not want the tortellini to overcook! While it is off the heat, add a splash of heavy cream and more salt and pepper to taste.
- Ladle the soup into a bowl and garnish with parmesan and more fresh herbs. Enjoy!
How long does it take to cook Tortellini?
- Usually only 4-5 minutes, depending on the brand of tortellini you have. I use the Buitoni tortellini from the refrigerated section that only takes 4 minutes to boil. That is why I love adding spinach to this recipe because it also takes 4 minutes to start wilting. That is why I add them in at the same time when making this soup recipe!
Can you freeze Tortellini Soup?
- Yes, you can freeze the leftover soup for up to 3 months after you make it! The pasta will be softer than it was the day you make it but will be just as delicious once it is reheated! You could also just make the soup without the tortellini then freeze. When you are ready, reheat the soup then boil the tortellini in it for 4 minutes for fresher taste! It is totally up to you!
What should you serve with Tortellini Soup?
- This soup pairs well with any type of bread! Try baguette, sourdough, or french bread!
- I also love making a side salad, like caesar or garden salad!
