This fluffy Coffee Cake without Sour Cream uses Greek yogurt to achieve its moist crumb and is finished with a delicious cinnamon streusel topping! This easy recipe makes for a delicious dessert and can even be enjoyed with your morning coffee for breakfast!
What is Coffee Cake?
While many people assume coffee cake is made with coffee in it, it is actually just a sweet cake that is meant to be enjoyed with a hot cup of coffee! That means this cake can be eaten for breakfast! Isn’t that just the greatest news ever? It is also topped with a crumbly cinnamon streusel which is also used in the filling layer of this cake as well!
It is said to have originated in the 17th century from Northern or Central Europe and made its way to America by the 20th century. It is definitely one of my favorite cake recipes and this one right here is the best recipe I have developed up to date! I added cinnamon to this easy coffee cake recipe for a deeper flavor and greek yogurt for an extra tender crumb!
Ingredients for Cinnamon Coffee Cake
Cinnamon: This will be used in both the cake and the streusel topping.
All Purpose Flour: I have not tested this recipe with any other flour so I would stick with all purpose!
Granulated Sugar: This recipe uses white sugar to give the cake its subtle sweetness.
Greek Yogurt: This will replace the sour cream to give the cake a moist crumb that will last for days after you make it!
Unsalted Butter: The butter will help with softness for this cake.
Eggs: To give the cake structure.
Vanilla Extract: This is optional but I find it pairs with the cinnamon flavor well!
Baking powder and Baking Soda: Equal amounts of both to create the perfect rise for this cake!
Milk: This is not traditionally used in coffee cakes but after experimenting, I found that adding whole milk makes the best texture!
Salt: To balance the sweetness and other flavors.
Streusel Topping Ingredients
Butter: Important for making crumbles, and must be cold for this streusel recipe.
Brown Sugar: Brown sugar is used for that signature coffee cake crumble!
All Purpose Flour: Important ingredient for streusel.
Salt: I like to add a pinch to balance the sweetness!
Cinnamon: Lots of cinnamon for that classic warm flavor!
How to make Cinnamon Coffee Cake
- Preheat oven and get ingredients to room temperature:
- Make sure your preheated oven is at 350 degrees Fahrenheit and grease an 8×8 pan or line with parchment paper. Make sure all your ingredients are set out at least 20 minutes before you start this recipe. The large eggs and butter should be at room temperature. The butter for the streusel however, can be kept in the fridge until you are ready to make the topping.
- Make your cake batter:
- In a large mixing bowl, whisk together the softened butter and sugar until light and smooth. Add in the vanilla extract, mix, then add in the eggs one at a time, whisking until well combined. Next, add the greek yogurt and mix until smooth. Lastly, add the dry ingredients (flour, salt, baking powder, and soda) to your wet ingredients. Switch to rubber spatula and mix until half way combined. Then add in your whole milk. Continue to mix until your batter forms.
- Prepare the streusel topping:
- In a medium bowl, combine the brown sugar, flour, cinnamon, and a pinch of salt. Then, cube the cold butter and use your hands to combine it. You want to do this pretty quickly so the butter doesn’t start to melt. You want to mix it until coarse crumbs form. Not only will this be used on top of the cake, but half will go in the middle to make a delicious cinnamon layer!
- Bake the cake:
- Layer half of the cake batter in your prepared pan then sprinkle half of the streusel mixture on top of the batter. Add the remaining batter then top with the remaining streusel. Bake for 50-55 minutes, depending on your stove. At the 50 minute mark, insert a toothpick in the center of the cake and if it comes out clean, it is ready!
- Drizzle with glaze and enjoy!
- To make the vanilla glaze, whisk together 1 cup of powdered sugar with 2-3 tablespoons of whole milk and 1 teaspoon of vanilla. Let cool before adding the optional vanilla glaze and enjoy as an afternoon snack, dessert, or breakfast!
Recipe Variations for Coffee Cake without Sour Cream
- Add 3 ounces of softened cream cheese to the glaze for a tangy flavor
- Swap the vanilla for almond extract
- Add more spices like cardamom and nutmeg
- Serve with whipped cream or berries
- To make this a chocolate chip coffee cake, add your favorite chips to the batter before baking

- 1/2 cup greek yogurt

- 1/2 cup brown sugar
- 1/2 cup all purpose flour
- 1 tbsp cinnamon
- pinch salt
- 4 tbsp butter cold
Vanilla Glaze
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp whole milk can add another tbsp if you want it thinner
