This really is the best grilled cheese sandwich recipe for when you only have shredded cheese at home. I actually prefer using pre-shredded cheese over sliced cheese or hard cheeses because it melts more evenly! Using a combination of cheeses will give you the best flavor. I like using mozzarella with sharp cheddar cheese or quesadilla cheese. This may be an unpopular opinion, but I don’t like using American cheese singles for my grilled cheese sandwiches!

Making homemade mayo really takes this sandwich to a whole new level. I also think the best bread for this sandwich is sourdough! Ingredients for Grilled Cheese with Shredded Cheese
- Shredded cheese: I think the best cheese for melting is Chihuahua Brand Quesadilla cheese but many different cheeses will work well too! Mozzarella cheese mixed with Cheddar is a great combo as well as Gruyere or Gouda. Something like grated parmesan cheese would not create a melty sandwich.
- Bread: Thick cut bread will work best, I like using sourdough bread! It makes for a crispy crust but sandwich bread will work also.
- Butter: A few tablespoons butter will help give your sandwich a crispy exterior to hold all the cheese! A little bit goes a long way!
- Mayo: I love using mayo for the base of the sandwich and I included instructions below to make homemade chipotle mayo which has a great kick of flavor!
How to Make Grilled Cheese with Shredded Cheese
- Prepare your mayo
- This is extra step is optional, but to make homemade chipotle Mayo, use an immersion blender to blend the egg, oil, lemon juice, salt, and chipotle peppers until combined. Set aside for later.
- Make sandwich
- Preheat a large skillet on medium heat with some butter and spread the Mayo on both each slice of bread. Add your shredded cheese inside of the bread slices then close the sandwich and cook for 4-5 minutes on each side or until golden brown and you see melty cheese.
- Enjoy!
- Enjoy with a side of salsa or tomato soup!
SUBSTITUTIONS
- Use regular store-bought mayo to reduce prep time!
- Swap the lemon juice in the mayo for lime juice for a more tart flavor
- Add multiple different types of cheeses for extra flavor and a larger cheese pull
- Swap the mayo for butter if you are not a fan of the taste!
- Serve with a delicious soup of choice!

- 1.5 cups shredded cheese
- 2 slices bread thick cut, like sourdough
- 1 tbsp butter
Chipotle Mayo
- 2/3 cup oil
- 1 egg room temperature
- 2 tbsp chipotle salsa (or chipotle peppers in adobo)
- 1/2 lemon (juiced)
- pinch salt
