This pecan pie cobbler is going to be your new favorite fall dessert! There is a delicious layer of pecan crackers that mimic the pie “crust” in this recipe along with brown sugar and cinnamon combined with the rich pecans. It creates a gooey sauce that pairs perfectly with a scoop of vanilla ice cream!
Substitute for Corn Syrup in Pecan Pie
I am not a huge fan of pecan pie because of the high fructose corn syrup so that is what inspired this pecan pie cobbler recipe! This cobbler is sweet and nutty and tastes just like a pecan pie without all the unnecessary corn syrup! A good substitute for this though is golden syrup, brown rice syrup, or molasses if you still want to try that pie!
Ingredients for Pecan Pie Cobbler
Pecans: The true star of this recipe! You can swap for walnuts as well!
Buttermilk: For the delicious cobbler topping!
Cinnamon: No fall dessert is complete without it!
Brown Sugar: For sweetness and rich flavor!
Pecan biscuits: For the “crust” layer. I buy mine from Effie’s. You can also use graham crackers instead!
Butter: To help create a gooey sauce for the pecan mixture!
How to Make Pecan Pie Cobbler
- Preheat oven to 350 degrees Fahrenheit.
- Pour the melted butter into an oval baking dish. Add the pecans, brown sugar, and cinnamon and mix until well combined.
- For the biscuit crumble, use a rolling pin to crush the Pecan crackers. Mix in the melted butter and brown sugar until combined and spoon evenly on top of your pecan base.
- For the biscuit dough, mix your flour, baking powder, salt and sugar together. Use your hands or a pastry cutter to work in the cold butter. You want to do this until crumbles form and you can clench the mixture in your hand and it retains its shape.
- Pour in the buttermilk and mix until no streaks of flour remain.
- Spoon the biscuit dough evenly on top of your dish and top with some brown sugar (optional). You can also pour 1/4 cup of hot water on top if you want the cobbler to have a sticky pudding consistency.
- Bake for 30-35 minutes or until toothpick in the center comes out clean.
- Let cool in the pan so the pecan filling can thicken and then serve with ice cream and enjoy!
SUBSTITUTIONS
- Swap pecans for walnuts!
- Top with flakey salt for a sweet and salty flavor!
- Use any kind of crackers you have on hand if you can’t find pecan biscuits near you!

- 2 cups All purpose flour

Crust Layer
- 10-12 Pecan crackers or sweet crackers of choice
- 6 tbsp Butter melted
- 1/4 cup Brown sugar
Pecan Base

- 1/2 cup Brown sugar
- 1/2 cup Butter melted

You can use golden syrup instead of corn syrup in almost any recipe. It is especially good in pecan pie recipes. You can find golden syrup in Publix grocery stores, in British specialty stores, or online.

This was one of the best desserts I’ve ever had! The only problem I had was the bottom layer being almost impossible to get out of the dish. I even used Pam to spray it before hand. I use Pecan Sandies for the cookie part. Will make again and try to figure out how to make it not get brick hard on the bottom.
