This sheet pan dinner is so easy to make and takes less than 45 minutes to prepare in the oven!
There are no extra pans or baking dishes needed for this recipe, just one sheet pan is all you need! You cook the chicken first then flip while also adding in your broccoli. Then you cook until the broccoli is tender. Yes, it is really that simple! The ginger soy marinade makes the chicken thighs caramelized and extra juicy and flavorful! I love using broccoli for this recipe because it cooks up fairly quickly and has a good amount of protein in them as well.
- TIP: You can swap the broccoli for cauliflower, brussels sprouts, green beans! Just adjust the cooking time as needed.
- One chicken thigh has about 15 grams of protein, so feel free to double up the portion to make this a high-protein meal!
- If you want your chicken and broccoli to be extra crispy, just broil at the end for about 2 minutes (keep a close eye on it!) then remove when desired crispiness is reached!

Sheet Pan Ginger Garlic Chicken Thighs with Roasted Broccoli
Ingredients
- 6 skin-on chicken thighs can also do boneless, skinless
- 1 head broccoli cut into small florets
- 1 tbsp brown sugar
- 1/2 cup reduced sodium soy sauce
- 1 tbsp corn starch
- 1/2 tbsp pepper
- 3/4 tbsp ginger powder
- 4 cloves garlic crushed
- 1-2 cups rice optional
Instructions
- Preheat oven to 425F
- In a bowl, mix the brown sugar, garlic, pepper, ginger, cornstarch, and soy sauce until well combined. Toss in your chicken and let them marinate for 10 minutes (or up to 30 minutes)
- Next, put your chicken on a baking sheet that is well oiled with the skin down. Reserve the marinade from the chicken for later. Cook for 15 minutes. Then flip, and brush the marinade on top of each chicken thigh. Now add the broccoli to surround the chicken on the pan, spacing them out evenly.
- Cook for another 20 minutes or until the broccoli is tender. Make sure the chicken has an internal temperature of 170F.
- If you want your chicken and broccoli crispier, set your oven to broil and broil them for about 2-3 minutes. Make sure you keep a close eye on them, you do not want these to burn and get dried out!
- Remove from the oven and enjoy over your favorite rice or by itself!
