
- 1 cup buttermilk (or use whole, 2%, etc.)
- 2 large eggs
- 4 tbsp melted butter
- 2 key limes (juiced) fresh is best!
- 2 tbsp key lime zest
- pinch salt
- 1 tbsp vanilla extract
- 2 tsp baking powder
- 4 tbsp sugar
- 1 1/2 cups all purpose flour
Key Lime Syrup
- 6 key limes (juiced) fresh is best!
- 1/2 can sweetened condensed milk
- graham cracker crumbles garnish
- fresh whipped cream optional for garnish
Preheat griddle to medium-low heat: Preheat your pan before making your pancake batter. I like to use butter to grease the pan when I make pancakes. Make your pancake batter:In a large bowl, whisk together the eggs, buttermilk, melted butter, key lime juice and zest, and vanilla until smooth. Add in your flour, baking powder, and salt and mix until just combined. Do not over mix!! You want the batter to be lumpy, this will create fluffy pancakes! Prepare the key lime syrup: In a medium bowl, whisk together your sweetened condensed milk and key lime juice. If you want the syrup to be more runny, you can add extra juice! Cook the pancakes:Ladle some of the pancake batter on your greased pan and cook for 3-4 minutes or until you see bubbles on top. Then flip and cook for another 2-3 minutes. Enjoy! Enjoy your pancakes with the key lime syrup, fresh whipped cream, and graham crackers crumbles!
