First, combine the chicken with cornstarch, salt, pepper, ginger and garlic powder. Mix and let sit while you heat your oil in a deep skillet or wok.
Next make the sweet and sour sauce. Whisk the pineapple juice, brown sugar, honey, chicken stock, ginger powder, garlic powder, and soy sauce together in a large bowl and set aside.
Once oil is heated, cook your chicken on medium high heat until golden and crispy.
While chicken is cooking, heat the sauce in a small pan. First cook on high heat, then let it simmer for up to 8 minutes. If sauce is not thickened by then, whisk in a tablespoon of cornstarch to help speed up the process. Simmer longer for a more thick and sticky sauce.
Now add the sauce to the large skillet with your cooked chicken. Stir until fully coated. Add in the pineapple chunks and let cook for 5 minutes on low heat.Taste the sauce and add more sugar or honey if you want it sweeter and more ginger and soy sauce if you want it more sour. Remove from heat and garnish with sesame seeds and green onions. Serve over a bed of rice of noodles and enjoy!
