Ingredients
6skin-on chicken thighscan also do boneless, skinless
1headbroccolicut into small florets
1 tbspbrown sugar
1/2 cupreduced sodium soy sauce
1tbspcorn starch
1/2tbsppepper
3/4tbspginger powder
4clovesgarliccrushed
1-2cupsriceoptional
Instructions
Preheat oven to 425F
In a bowl, mix the brown sugar, garlic, pepper, ginger, cornstarch, and soy sauce until well combined. Toss in your chicken and let them marinate for 10 minutes (or up to 30 minutes)
Next, put your chicken on a baking sheet that is well oiled with the skin down. Reserve the marinade from the chicken for later. Cook for 15 minutes. Then flip, and brush the marinade on top of each chicken thigh. Now add the broccoli to surround the chicken on the pan, spacing them out evenly.
Cook for another 20 minutes or until the broccoli is tender. Make sure the chicken has an internal temperature of 170F.
If you want your chicken and broccoli crispier, set your oven to broil and broil them for about 2-3 minutes. Make sure you keep a close eye on them, you do not want these to burn and get dried out!
Remove from the oven and enjoy over your favorite rice or by itself!
