Ingredients

  • 20 oz 3 Cheese Tortellini
  • 48 oz Chicken Broth
  • 1-2 tbsp olive oil
  • 1/2 onion finely diced
  • 3 garlic cloves crushed
  • 1/2 lemon juice
  • 2 tomatoes medium sized, diced
  • 2-3 cups spinach
  • fresh oregano and basil optional
  • 2 tbsp marinara sauce
  • 2 tbsp italian seasoning
  • salt and pepper to taste
  • parmesan garnish

Instructions

  • First, heat up two tablespoons of olive oil in a large pot on medium heat. Then sauté the onions until they are soft and translucent.
  • Next, add the garlic and tomatoes together and cook for a few minutes until the tomatoes get soft.
  • Add the chicken broth, lemon juice and fresh herbs then raise the temperature to high heat until it starts boiling.
  • Add the tortellini and spinach then cover with a lid. Let cook for 4 minutes, or according to your package instructions. Remove from the heat FAST, you do not want the tortellini to overcook!
  • While it is off the heat, add a splash of heavy cream and more salt and pepper, and Italian seasoning to taste. Ladle the soup into a bowl and garnish with parmesan and more fresh herbs. Enjoy!
