First, heat up two tablespoons of olive oil in a large pot on medium heat. Then sauté the onions until they are soft and translucent.
Next, add the garlic and tomatoes together and cook for a few minutes until the tomatoes get soft.
Add the chicken broth, lemon juice and fresh herbs then raise the temperature to high heat until it starts boiling.
Add the tortellini and spinach then cover with a lid. Let cook for 4 minutes, or according to your package instructions. Remove from the heat FAST, you do not want the tortellini to overcook!
While it is off the heat, add a splash of heavy cream and more salt and pepper, and Italian seasoning to taste. Ladle the soup into a bowl and garnish with parmesan and more fresh herbs. Enjoy!
